Hot off the press from team chefs meal prepping for the Tour de France riders, here is one the more popular energy snack to keep the teams ticking over. Please note – these have a particularly short shelf life, about 4 days, so make sure you’ve got a good week of training ahead to get through them. Alternately, if you’re training with friends share and share alike. Naturally you can also cut them up and pop them in the freezer for a later date.
Recipe: (enough for 4 people – or a weeks worth of training).
500g short grain rice (risotto or pudding rice is perfect for this recipe).
1 tin Coconut Milk
500ml organice Apple Juice
1 litre Water
A pinch of salt
Golden Raisins, Dried Apple Slices (chopped but not too finely), Brown Sugar and Cinnamon to taste.
Add all the liquid to a pan. Add the rice. Give it a good stir. Cover and bring to the boil. Once boiling stir again and bring down to a simmer keeping it covered. Stir every 5 mins or so. Give it a try once you think it looks ready, and if necessary add a little more water and cook for longer. Make sure there is no bite to the grains, and once it’s reached a thick consistency (almost porridge like) begin to add your apple slices, golden raisons and brown sugar.
Line a baking tin, or baking dish with cling film, spoon in the mixture, flatten down and top with cinnamon. Pop them in the fridge overnight. The next morning the mixture should be firm enough to cut into bars and wrap in parchment paper to take out on your training.
