Taste the ocean with this delicious omega rich Mackerel on Toast…

Here’s a little recipe to get you in the mood for beach barbecues this summer.  Rich in Omega 3, this dish is both delicious and packed with health benefits including reducing the risk of heart disease, controlling your blood pressure levels and improving cognitive function…so anyone with exams coming up, stock up on your mackerel!

Ingredients

  • ½ cucumber, peeled, thinly sliced length ways
  • salt
  • 4 tbsp grated fresh horseradish
  • 2 heaped tablespoon creme fraiche
  • 2 tsp english mustard powder
  • 4 fresh mackerel fillets
  • salt and freshly ground black pepper

To serve

  • 4 slices soda bread, toasted
  • 1 red onion, thinly sliced
  • ½ lemon
