Recipe: Chilli crab pasta

Loves a bit of seafood we do. This super simple pasta recipe has a nice heat to it with the chilli, but feels a touch luxurious with the crab. Plus, the crab is a great source of protein, Omega-3, Vitamin B2 and Phosphorus.

Ingredients
150g linguine
2x spring onions, chopped finely
½ red chilli, remove the seeds and chopped finely
200ml white wine
Grated zest and juice of ½ lemon
200g fresh white crab meat
50g wild rocket
Small bag of spinach
Rapeseed oil

To serve (2 portions)
Cook the pasta in a large pan of lightly salted boiling water.
Drain the pasta well, then toss with a little rapeseed oil
Heat 1 tbsp of rapeseed oil in a small frying pan over a medium heat
Add the spring onions and the chilli and fry for a couple of minutes
In a separate pan, add the spinach and wilt
Pour the wine into the chilli and leave to bubble for a couple of minutes while it reduces
Turn down the heat, add the zest and juice from the lemon and crab meat, stir to combine
Season the crab to taste, then add the crab mix and the pasta into the spinach pan, along with the rocket and mix well.

Now serve it up into two pasta bowls and enjoy!
